IMHO u have to precise your target group... It is impossible to make tasks 'perfect to all'. Question is which direction tasksetting should go...
For some ppl slower/more realistic/flatland tasks may be just too boring. And it is OK, as they prefer smthng else...
But it works opposite as well... For some, tasks far from reality, may be not worth their time...
Maybe first group of pilots is majority in C? Maybe most not care? Maybe noobs are affraid of "realistic" tasks (coz it takes too long to finish or make them tired) Who knows.
(BTW - If they will fly only short/fast/arcade they will never learn, but that's another story).
IMHO (but I am not sure) would be good idea to split your contest into two kind:
1st - SBC11 - traditional way, maybe even little relaxed in rules (as was proposed by some pilots)
2nd - SBC11b - smaller in participants contest for those old fashioned, with little different/longer tasks, diff. weather, harder rules, more days counted etc
With such move - no complainers maybe
